The bistro takes its name from the mogette (mojette) bean , a dry haricot bean also often referred to as lingot. This bean is grown principally in the Vendée region of France and is traditionally paired with ham from the same region or served cold on well-buttered slices of bread . Mogette, heavily laced with garlic is a traditional accompaniment to roasted lamb, duck breast and used in the popular dish cassoulet , a slow cooked bean stew containing a mixture of meats – pork sausages, pork, duck, lamb, etc
